Our Roots

Fig & Bean Bakery is grounded in a love for baking and a desire to provide the community with wholesome organic bread that satisfies gluten and non-gluten eaters alike. 

​

Seeds of the bakery were first planted in the childhood kitchen of baker and chef, Finn Angelina Mifsud.

 

Finn began devising gluten-free recipes at age 9 when her Mama discovered she is intolerant to gluten. Finn started out adapting muffins, cookies, and desserts, but the baked good her Mama missed most was bread. Determined to deliver a nutritious, flavorsome bread that was unnoticeably free of gluten, Finn took a dive into the world of bread baking, not knowing it would eventually become her life's work. 

 

Jump to today, Finn has dialed in on the craft and curated a lineup of original, organic gluten-free bread.

 

With the stamp of approval from even the most seasoned of bread eaters (we're talking natives of France), Finn is proud now to be bringing her bread to you.

Committed to the idea that good food is essential to good health, we create our breads using a short list of clean, organic ingredients that have been ethically sourced and, to maximize their nutritional value, have undergone little to no processing.

We are truly grateful to be part of Eugene's vibrant community. To support the local economy, we do our best to source from and partner with other small, locally-owned businesses. We are woman-owned and strive to cultivate an environment in which all life is honored and treated with respect. 

​

Our business is dedicated to helping restore Earth's vitality. We implement practices of zero-waste, recycling, and composting, and we work to minimize our energy and resource consumption through efficient baking processes and eco-conscious packaging. When available, we source ingredients from millers and farmers who practice regenerative agriculture.

Meet Finn Angelina Mifsud, Baker and Founder

Hello and thank you for visiting the website! 

 

A bit about me:  

 

~ I am native to Eugene and feel blessed to call the PNW home. 

​

~ In 2023, I graduated Summa Cum Laude from the University of Oregon, earning Bachelor's degrees in Philosophy and French with departmental honors, and minoring in Entrepreneurship.

​

~ During my senior year, I competed in and won the Oregon Innovation Challenge with my entrepreneurial venture, Fig & Bean Bakery. I hold immense gratitude for the University of Oregon and their contribution to our establishment. 

​

~ The bakery's name is inspired by my two beloved pups,

Fig and Bean (pictured right).  

​

~ This bakery would not have been possible without the support and encouragement I have been given by an amazing team of family, friends, and community members. 

​

~ My favorite part of running the bakery and sharing my bread is hearing that it makes people happy.  

​

~ When I'm not in the kitchen cooking or baking while listening to tunes, you'll find me exploring nature, gardening + farming, hiking, practicing yoga, training for my next triathlon, creating art, or snuggling up with my dogs + cat (Bubble), coffee, and a book or film.
